4 Chicken Breast

1 Cup White Wine

1 Cup Low Sodium Chicken Broth

4 Sprigs Oregano

2 Tablespoons Chopped Parsley

1/2 Cup halved Olives

1/2 Cup Sun dried tomatoes in oil and chopped

1 Preserved Lemon Skin thinly sliced


1. To cook the chicken, start by heating oil in a straight-sided skillet over medium-high heat. Once heated, dry the chicken breasts and sprinkle with salt before placing them into the skillet, skin-side down. Cook for about 6 minutes or until deep golden brown. Flip the chicken using tongs and cook for another 5 minutes on the bone side. Once cooked, remove the chicken from the skillet while you prepare the sauce.

2. To make the sauce, add shallots to the same skillet and sweat for a minute while stirring occasionally. Next, add preserved lemon, olives, and sun-dried tomatoes, and stir to combine. 1/4 C. Cilantro Leaves

1 Avocado


1. Combine onion, 1 tablespoon lime juice, sugar, and a dash of salt in a small bowl. Slice one jalapeo in half, then add the rounds to the bowl. To make a creamy mixture, add avocado, cilantro, the remaining 1 1/2 tablespoons of lime juice, and 1/2 teaspoon of salt to the medium bowl with the remaining jalapeo that has been finely chopped.

2. Turn up the broiler’s heat. Combine the chipotle sauce, adobo sauce, and barbecue sauce in another small bowl.

3. Cap side down, arrange portobellos on rimmed baking sheet. 5 minutes of broiling. After flipping, coat tops with adobo glaze, and broil for 2 to 3 minutes, or until browned in places. If needed, add more glaze as you slice.
